Abstract
Cachaça is an ancient drink originating in Brazil. It has a great impact on Brazilian history and is considered an important cultural heritage. Over the years it has always been closely related to the most marginalized classes, suffering a lot of prejudice. However, in recent years it has gained space on the tables of all social classes, both nationally and internationally. This drink is closely related to tourism, increasing the value of Brazilian regions of great historical importance and attracting visitors wanting to visit production sites and enjoy tastings. In addition to its consumption as a pure drink and added to drinks, cachaça can serve as a key ingredient in recipes for savory foods, sweets, seasonings, among others. Gastronomy has increasingly valued the peculiarity that cachaça brings to dishes, from the simplest to the most elaborate. Very famous events bring more visibility and value to this drink. This work is a qualitative descriptive review that aims to highlight the role of cachaça in giving appreciation to this century-old drink as an important ingredient in Minas Gerais cuisine.
