Abstract
Compliance with food safety standards demands an efficient management system, ensuring the full involvement of interested parties and the implementation of appropriate control measures. Effective management of information and results is crucial to ensure compliance with established control practices, promoting food safety and quality in production. In this scenario, the construction of a digital checklist in parallel with technological systems becomes a relevant object for capturing data in real time. The general objective of this study was to develop and implement digital cleaning checklist forms, aligned with the principles of Industry 4.0, with the aim of improving information management in a food company, which focuses on potato manufacturing. frozen pre-fried. The study presents a review of the industry's evolution up to 4.0, and the correlation of national scenarios with the food industry, presenting relevant concepts about the application of technology in organizations and the importance of using cleaning checklists in the food sector. In order to identify the main problems related to filling out analog documents, the study also aims to develop a cleaning checklist in an automated data collection system, which allows the generation and construction of the digital list efficiently and accurately. The method used for this study was descriptive, with bibliographic and applied designs. The data obtained enabled a thorough analysis of the main problems identified when completing cleaning checklists in physical format, justifying the need to develop the corresponding digital document. It is understood that the results achieved can be beneficial in evaluating the emergence of the digital checklist as an effective strategy to improve operational management and the quality of processes in various areas, which resulted in the elimination of all process deficiencies, such as absence of signatures, signature errors, missing documents and filling errors, as well as eliminating expenses with printing. Additionally, it provided a more effective optimization of time.
