Abstract
Managers of gastronomic enterprises can learn about or confirm the uniqueness of their business and its market positioning through customer reviews published on review sites. According to international data from the company Jumpshot, the Tripadvisor website was considered the largest travel platform in the world in 2019. Tripadvisor currently boasts “more than 859 million reviews and opinions” about various tourism stakeholders, including restaurants (TRIPADVISOR, 2025). This field survey, conducted with managers of the restaurants in Ouro Preto (MG) that are best rated by Tripadvisor users (according to a list published in 2021), aims to identify the presence of professionals in the gastronomy field, specifically gastrologists, in these establishments; to understand the degree of relevance of this website for these managers; to analyze the relationship between the performance of these professionals and the market positioning of these enterprises; and to determine which professional skills in the gastronomy field, from the managers' perspectives, contribute to the market positioning of their restaurants, as reflected in these reviews.
